With a commitment to sustainably nurturing the vineyards, he embraces labour-intensive winemaking techniques. The Pinot Noir grapes for this wine are hand-harvested in the cool of the night, fermented using native yeast, aged 9 months on lees with 11% in new oak barrels, use minimal sulphide and are finally bottled unfined. All this care and attention to detail creates a wine with structure and weight that is in balance with pure, concentrated fruit.
