The delicious tonkotsu ramen and noodle dishes which are rich in flavours and umami require a clean bright but flavoursome wine, and for the more spicy piri piri dish it works particularly well with a bright citric lemony German lager.

For the Ganso and Vegan dishes, I recommend the full bodied white Rioja, Los Hermanos Manzanos Blanco Barrica 2019 from Laithwaites at £8.55 for a mixed case of twelve with our voucher. This wine has complex flavours from the barrel ageing and blend of grapes, with a lovely long, bright fresh palate cleansing finish.

For the Piri piri tonkotsu which is quite spicy I recommend the classic Gewurztraminer pairing. The spicy fruit , lychee and white peach flavours is underpinned by bright fresh ripe citrus and a touch of sweetness which offsets the heat from the chilli peppers. Again from Laithwaites the Pierre Brecht Gewurztraminer 2019 is a perfect match.

A bright fresh citric lager with a bite of hops is also a very good accompaniment to a spicy dish like this. The Pilsner style Lost Lager from Brewdog at £4.25 for four cans has enough crisp hoppy flavour for this dish.
