The wonderful Basque menu with tapas, Jamon, olives, anchovies and typical Basque main dishes also has a good selection of typical northern Spanish wines and some old mature sherries on offer from this Michelin starred restaurant.
Try the Pizarro white Rioja or their exclusively Basque Wine, the complex Txakolina.
I am surprised they have not offered the one wine that I would expect for this food, a great fino bone dry sherry, or even better a fresh crisp Manzanilla. The salty crispness and reasonable alcohol level of 15% for a fortified wine means you can drink a Manzanilla throughout, and you will find it perfect with all the dishes.
Remember this wine is best kept in the fridge and served cold. It also prevents some loss of freshness through oxidation if you don’t drink the whole bottle or half bottle in one sitting!
Majestic Wine have the excellent Manzanillas from Hildalgo, La Gitana is fresh, bright, crisp with mineral saltiness, £6.99 per 50cl bottle.
The big international brand of Fino from Gonzalez Byass, Tio Pépé, is a phenomenally good, well made, bone dry crisp Fino, and great value for that quality. It is crisp, intense and mineral and a bit more powerful that the Manzanilla so perhaps better with the spicier and salty tapas. Also at Majestic for £10.99.
And from Majestic their Rioja Blanca 2018 from Muga is excellent and powerful enough for all these dishes, also £10.99 per bottle.
This all looks brilliant for a proper Northern Spanish experience. Cheers!
