Wine OREMUS VEGA SICILIA - The production of Aszú wine is a meticulous process, which requires a lot of patience and knowledge. It is only possible in good vintages when nature provides rain in late summer and a sunny, windy period in early autumn, which are essential conditions for the process of forming noble grapes. The berries, swollen by the humidity, split, the Botrytis cinérea settles on their skin, and the noble rot is triggered. The botrytised grapes are macerated and vinified with the rest of the must. Aszú is aged in barrels in underground cellars dug into the volcanic soil. The wine is aged for 2 to 3 years in the cask and then for a year in the bottle, which gives it the opportunity to begin a developmental trajectory that may even last several decades. On the nose as well as on the palate, it is an incredible balance of freshness and great maturity of fruit. We find notes of candied orange, nuts and honey. The length on the palate is incredible and we finish on a light acidity that maintains itself and makes the wine subtle and elegant.
