The Hermit Ram’s wines are naturally farmed without the use of any chemicals, with the winemaker Theo Coles believing that it helps the grapes to tell their own story. The grapes in this Salty White bottling are fermented in whole bunches, and pay homage to the New Zealand coastline by marrying the saline and floral elements of the country. Complex, creamy and, like the title suggests, salty, it’s also citrus, herbal and green with fruits.
