Harvested at night to concentrate the aromas and flavours, the cooler temperatures ensure better control for the start of the fermentation and less oxidation of the fruit It is then aged on lees for 2 months to gain complexity.Hints of melon, peaches, strawberries, and spring flowers create a wonderfully refined, drinkable rosé. There are fresh crisp notes of cherries and strawberries on the palate, a juicy, lively but pure aftertaste with well-balanced acidity. Best enjoyed as an aperitif or perfectly paired with pizza, pasta, and Mediterranean salads.
