Ever heard of Mauzac? Well it's my first time too. 90% of this variety is blended with Chenin and Chardonnay. The other thing this does differently is ignore the popular trend for Cremant and stick with Limoux's very own Blanquette sparkling. Blanquette requires 90% Mauzac at least and indeed is the local name for the variety (it makes sense now).
A light, soft nose displays green apple, pear and some bready notes. A more interesting mix of lemon cake and white flowers come after a few more sniffs. It tastes like the perfect aperitif with a gentle yet fresh mousse. Expect lemon, pear and vanilla as your main flavours. It is given greater backbone through brioche flavours but ultimately it is a light sparkling destined for the afternoon tipple.
