One of only two French appellations dedicated to the production of rose, the other is Rose de Riceys AOP in Champagne, Tavel is the OG in the Provencal style. As soon as Tavel was recognized as an official AOC in 1937, Cave des Vignerons de Tavel was created. Caves des Vignerons de Tavel, a growers cooperative, are now responsible for producing half of all Tavel in the appellation. One hundred and forty producers are banded together to make the most classic style, each of them involved and responsible for the daily operation of the Caves. Because of this cohesive operation of the coop theyve gone on to win frequent medals in wine competitions and are almost always noted in top wine guides.Enjoyable with a quick appetizer as well as a meal, charcuterie, spicy Indian, Middle Eastern, Asian, and Provencal dishes, white meat and goat cheese.
