The grapes are sourced from the viticultural zone of Agios Panteleimon within the Amyndeon appellation in Macedonia. The high altitude (600m) and the poor sandy soils of the area lead to the production of wines displaying finesse and a rare aromatic character. The Xinomavro vines are over 60 years old and produce low yields of exceptional fruit. The grapes are hand-picked and after fermentation the wine is transferred into oak barrels where it is left to mature for 14 months, and once bottled it is given another year before release.
