The wines from Chablis are the world's most expressive examples of Chardonnay that have an intense mineral streak. The 1er Cru Les Vaillons, which is made with grapes which come from a small plot of only 3 hectares, has a broad, focused nose of lemon zest followed by hints of white flowers and wet stone. Mineral power and energy on the nose is lifted with white peach and citrus fruit flavours on the palate. It will make a fine match with fish dishes such as baked salmon or trout, or pan-fried foie gras if you're feeling a little more decadent.
