Next, the must spends six years in small chestnut casks sealed with wax (called Caratelli ) with a volume ranging from 40 to 180 litres and housed in a granary that is subject to significant variations in temperature. This is where the wines ferment and develop, during which up to 50% of the volume evaporates. This quintessence is accessible to a handful of wine lovers and Italians call them Vino da Meditazione !
