Grown without the use of pesticides or insecticides, they’re harvested by hand and fermented in their skin for 20 days before they’re transferred to oak barrels where they mature for three months. A combination of red fruits and smouldering spices, it complements fresh pasta dishes and roast lamb to name just a couple.
