Gently rolling hills rise in the countryside around Weingut Wittmann in Westhofen, but underneath each one are hidden millions of years of sediment under pressure, which have developed into a wide variety of geological formations. You can taste this in the wines. Kirchspiel sits primarily on clay marl with limestone deposits as well as loam composed of weathered limestone. This gives this wine its unmistakeable, spicy and elegant character. Winemaker Philipp Wittmann also works in harmony with nature on his family estate, practicing organic and biodynamic viticulture to create this beautifully balanced and natural Riesling. He is very hands on - from creating his own composted fertilisers to selective hand-harvesting.
