Eiswein is a specialty of the Schales family from Rheinhessen. The harvest for this luscious wine may only be carried out at a temperature of -7°C, which ensures that the water in the Silvaner grapes is largely frozen, so that a very high concentration of sweetness can be guaranteed. Once fermented, you get a wine with intense apricot, peach and white blossom aromatics as well as some subtle citrus and green apple too. The fruit on the palate is luscious but there's a stony freshness and grip that keeps it all together, with the sweetness really well balanced by acidity on a long finish.
