Cava is one of those things I am guilty of ignoring. In part, it is given less attention in stores thanks to the Prosecco overlords but it just also isn't on my mind when looking for fizz. This is certainly a mistake, especially on trying something like this. It simply has that depth and richness that Prosecco doesn't really achieve, afforded by a nutty characteristic - it is closer to Champagne in many respects. Then, dried apple and lemon provide the mainstay of the fruit and give a welcome brightness to the wine.
