Wine CHÂTEAU DE FUISSE - The distinctiveness of the Saint-Véran appellation is firstly in its geographic location. In the northern and southern Pouilly-Fuissé appellation, shared among seven villages, it forms a sort of golden belt. Following a typical Burgundy wine making process at Saint-Véran, the lees are kept in suspension through stirring or pumping, to encourage the autolysis of the yeasts by freeing the fat part into the wine. It reveals an intensity of ripe fruit and white flowers giving a stylish, rich and full palate while retaining a minerality with notes of lemon and yellow, green pears.
