Did you know the inside of most red grapes like Merlot or Cabernet is actually white? The deep red colour comes from the grape skins. The Alicante grape has a black skin AND black juice ... Pigassou red is largely Alicante, so you can see how the Black Pig got its name. But you'll find other traditional, tongue-staining Midi varieties like spicy Cinsault, Carignan, juicy Grenache ... hard to say. Vins de Cafe have no regard for appellation rules and are humbly labelled Vin de Table. There remain a plucky bunch of southern French vignerons who refuse to grow anything else - that and the ongoing enthusiasm of its many fans keeps the Black Pig thriving. Great news for fans of big reds.
