Pale Fox is one of those Proseccos trying to shake off the cheap and cheerful label to show you what Prosecco made with care and quality is really capable of. There is no need to reserve Champagne to this price point if you are adventurous enough. And if you love Prosecco, then why go for Champagne for a bougie evening when you could have this instead?
Why is Pale Fox so Expensive? Firstly, harvest is selective and yields are kept to a minimum to ensure that only quality grapes are produced by the vines. Unlike other Proseccos, fermentation is given proper time and consideration to develop a much greater depth of flavour and allow the bubbles to integrate with the wine much more finely. Finally, it is a premium Single Estate Prosecco from the famous Asolo region, which is recognised for its superior growing conditions.
How good does Pale Fox taste? Well, although it is Prosecco, there are certainly elements that sway towards Champagne. You'll find bread dough and brioche act as the support for the entire palate, whilst the more delicate flavours you'll want in a good Prosecco tantalise your tongue. Plenty of citrus from apple and pear to lemon intermix with floral and blossom flavours. The finish is wonderfully long and the bubbles impart a creamy decadence.
