75cl / 14.5% - This is a new project from David Seijas who was the former head sommelier of El Bulli. He blends indigenous grape varietals from three different regions in Spain. On the nose red and black hedgerow fruits with a lick of vanilla and sweet spices come through. The palate is all about raspberry and coconut macaroons with blueberries but it still retains a lovely freshness with a herbaceous lift on the finish. Enjoy this with a meat stew.
