75cl / 12% - The Collard family settled in the Grand Cru village of Bouzy in 1919 and own a hectare of land here and another in Celles sur Ource in the Aube. The vineyards are farmed organically with some biodynamic treatments. This vintage is a blend of 20% Chardonnay and 80% Pinot Noir. It has notes of apricot compote, plum crumble and bramble apple, and is a perfect match for partridge or sea bass.
