The Grenache, Syrah and old vine Carignan combine wonderfully on the nose. Their black fruit intensity is underscored by black olive tapenade and smoky minerality. The palate pours out the luscious and fleshy texture of ripe Mediterranean fruit but this is tempered by both the freshness of its minerality and the coolness swept in from the Pyrenean foothills. This freshness of retained acidity streaks through the complex structure of flavours which the minerality brings, pulled up from the grains of granite soil by the vine during the wetter growing season and flushed into its offspring, the grapes.
