Bottled at a punchy 60.5% ABV, 121 Proof manages to have a smooth, complex character, with aromas of apples, cinnamon, vanilla and caramel. The palate is complex; creamy, spicy and sweet notes fighting for the lead. Initially vanilla and apple notes appear, before cinnamon and pepper take the lead. Caramel and creamy custard join the fray, alongside nutmeg and freshly-baked pastry.
