InchDairnie distillery is a Scottish whisky distillery located in the town of Kinglassie, Fife. The distillery is known for its modern approach to whisky-making, incorporating advanced technology and techniques to create unique and high-quality spirits. It uses a mash filter press system to extract more sugars from the grain, resulting in a higher yield of alcohol and a more efficient process. This inaugural release from the distillery is RyeLaw, which is made of 53 per cent rye and 47 per cent malted barley; it is then fermented using a rye-specific yeast, which results in lower yields, but higher flavour and then double distilled in pot stills. Finally it is matured for 5 years in charred new oak casks, created from trees that can be traced back to forests in the Ozark Mountains, USA.
