The region of Marsala, in western Sicily has a classical maritime climate, with winds sweeping off the sea and bountiful sunshine, delivering the perfect conditions for wine production. Cantina Paolini was founded in 1964 and champion an environmentally friendly approach, with minimal use of sulphur and fertilizers. Typically, Paolini pick at least two weeks earlier than their neighbours to retain freshness and acidity. Everything is picked by hand, and in the early morning, to protect the fruit. Fermentation and ageing is in temperature-controlled stainless steel tanks to protect the freshness again. Grillo has been grown in the Marsala region for over two hundred years. It is a cross between Catarratto and Muscat dAlexandria and this gives the wine both fresh minerality and an aromatic character.
