The domaine is certified organic and works with very low yields which produce incredibly concentrated wines. There are aromas reminiscent of fino sherry, due to this wine’s aging ‘sous voile’, or ‘under veil’ – an oxidative form of aging, similar to aging under ‘flor’ in Jerez.
