70cl / 53.5% - This 2022-vintage clairin is made with the heirloom Madame Meuze cane variety at Arawaks distillery in southeastern Haiti. Distillation takes place in a homemade pot still, built by the owner and powered with an old locomotive steam engine. There is a fresh and salty character to the spirit with aromas of olive, papaya, flint and banana on the nose, leading to notes of overripe fruit and a clean, mineral finish.
