70cl / 53.5% - The 2021-vintage of Clairin Sajous was produced at distillerie Chelo, which is owned by third-generation producer Michel Sajous. This rum uses a variety of sugar cane, harvested between December and August, and fermented using wild yeast for up to one week. The result is a fresh and grassy bouquet with aromas of unripe pear and coconut on the nose, followed by white pepper, kaffir lime leaf and honeydew melon on the palate.
