Chateau Fuisses Tete de Cuvee is a blend of over twenty prime vineyard sites throughout the appellation of Pouilly-Fuisse. Plots in Pouilly, with a high limestone proportion, contribute intense perfume yet more delicacy in the mouth. Those in Fuisse, where clay is more prominent, are less aromatic but fuller, more solid and structured. Vines are an average of thirty years old.Each vineyard site is vinified separately until the final blend is chosen following aging. 60% of the wine is aged in oak barrel (25% new) while the remaining 40% is stored in stainless steel to retain its pure fruit.An excellent example of the true potential of the wines of Pouilly-Fuisse and a great introduction to the wines of Chateau Fuisse. The wine is rich and robust in the mouth, but retains its lean acidity and freshness throughout. A perfect match with steamed mussels, smoked whitefish, or spaghetti carbonara. Match with bloomy rind Camembert.
