75cl / 11% - This Welsh sparkling wine comes from two separate plots on the edge of Monmouth. They are fermented in a mix of cement eggs, stainless steel and Austrian oak on the lees for 12 months. They then spend a further 5 years on the lees in bottle. On the nose it is reminiscent of baked apples with sultanas and custard. The palate reflects the nose but with a delicious lift of candied oranges. It is Biodynamic.
